How To Deal With Leftovers?
- When food sits at room temperature, bacteria that can make people sick can grow quickly
- After the meal, quickly cool food and store at 41 degrees Fahrenheit or below. Cool foods on counter or in an ice bath before storing in the refrigerator or freezer.
- Perishable foods, such as those containing animal products, cooked vegetables, and grains, should be tossed or composted after four hours at room temperature
Leftover Turkey Tacos and Cranberry Salsa
Ingredients
Tacos 8-12 corn tortillas
2 cups grated Monterey Jack cheese, or mild cheddar
leftover Cooked turkey meat, cut into bite-sized pieces
Lettuce, thinly sliced
Fresh cilantro for garnish
Salsa
1½ cups of fresh or frozen leftover cranberries
½ apple, peeled and cored
Chopped Serrano or jalapeno chili pepper to taste (about a half a chili, but taste for desired heat)
4 tablespoons sugar
2 tablespoons chopped peeled ginger or 2 teaspoons powder ginger
2 tablespoons chopped fresh cilantro
1 tablespoon of lime or lemon juice
Dash of salt
Directions
- Prepare cranberry salsa. Put the cranberries, apple, chili pepper, sugar, ginger, cilantro, and lime or lemon juice in a food processor and pulse until coarsely shredded or chop up fine.
- Let sit 15 minutes for the cranberries to macerate.
- Heat a large frying pan on medium high heat with oil and heat turkey.
- To serve, open up the tacos and put some chopped lettuce and plenty of cranberry salsa over the cheese and turkey. Garnish with fresh cilantro.
- Serves 4
